What is the night life like in Mexico? Are most of the great dining and eating establishments associated with resorts, or are there really good places to visit away from the resorts?

I remember reading somewhere that Mexico has a vibrant night life. I'm sure I'd enjoy it a lot.

Depends where you go. Like any city. Some have good night life, some dont. Some night club places you go you will get robbed, some you wont.
